Flavour: Smooth, medium sweetness

Qualities: Good all round table honey

Macadamia
Colour: Very light
Region: Maryborough
Flavour: Light, slightly nutty, toffee sweetness
Harvested: Spring 2008
Qualities: Favourite with children of all ages

Grass Tree
Colour: Medium amber
Region: Ravenshoe
Flavour: Distinctive - a love it or loathe it end on the palette
Harvested: Autumn 2009
Qualities: Something different for the adventurous

Bessie Point
Colour: Medium amber
Region: Cairns
Flavour: Light with very subtle spicy end tones
Harvested End 2008
Qualities: Good all round honey

Mahogany
Colour: Light to Medium amber

Flavour: Soft and mild

Qualities:  Perfect sweetener for all beverages

Chinee Apple
Colour:  Medium amber
Region: Charters Towers
Flavour: mild with a subtle smoky aftertaste

Qualities: Wonderful waffle topping

Tropical Coast

Colour: Dark

Flavour: Rich, strong flavour

Qualities: Reminiscent of molasses

Rainforest

Colour:  Medium to dark amber
Region: Mareeba
Flavour: Complex floral flavours
Harvested: April 2009
Qualities: My favourite in tea!

Ironbark

Colour:  Very light
Region: Pinnacle Station Cape York
Flavour: Delicate, refined
Harvested: April 2009
Qualities: Excellent for baking

Trinity Coast 

Colour:  Very dark
Region: Trinity Inlet,
Cairns
Flavour: Average sweetness; Hint of bitterness at end
Harvested: June 2009
Qualities: Table honey with a little more flavour

 

Tea Tree (Narrow Leaf)

Colour:  Dark Amber
Region: Pinnacle Station Cape York
Flavour: Medium with caramel overtones
Harvested: June 2009
Qualities: Traditionally used as medicine

Flavour: Floral overtones; medium sweetness
